Strawberry & Mint Fruit Leather

INGREDIENTS:
350g organic frozen strawberries, thawed
Juice of 1 lime
½ teaspoon finely grated lime zest
3 tablespoons raw honey
5-6 large mint leaves
METHOD:

Preheat the oven to 75 degrees C, or the lowest temperature of your oven (see notes). Line a large baking tray with a silicone baking mat or baking paper.

Combine all ingredients in a blender and blend until completely smooth.

Pour the mixture onto the lined baking tray and spread into a thin, even layer all the way to the edges, about 3mm thick.

Bake until you can touch the leather and it is no longer wet, but still slightly tacky, 2 ½ – 3 hours. Baking time can vary depending on the thickness of the leather and the temperature of the oven. Let cool completely.

Once cooled, transfer to a clean sheet of baking paper and cut into strips with scissors or a sharp knife. Roll up in the baking paper and keep in an airtight container.
NOTES:
If your oven only goes down to 100 degrees C, open the oven door for 10-15 seconds every 30 minutes
