Gelatin Gummies

Makes: 16 – 24 gummies Prep time: 20 minutes
BERRY & COCONUT GUMMIES
Ingredients:
- 2 cups coconut water (or apple juice)
- 1 cup mixed berries (thawed if using frozen)
- Juice from ½ lime
- 1 cup water
- 3 tablespoon raw honey (optional)
- 6 tablespoons grass-fed gelatin
Directions:
- Add the 2 cups of juice (or coconut water), berries, lime juice and to a high speed blender and blend until smooth. Transfer to a small saucepan and heat gently (no need to boil, just create a hot liquid). Add honey and stir well.
- Bloom gelatin by adding to a small bowl with 1 cup room temperature water, or extra juice or coconut water (note juice will make a sweeter version). Stir until it thickens. Add gelatin to warmed juice and stir well until completely dissolved.
- Pour evenly into silicon moulds. Place in the fridge for at least 3 hours to set.
PINEAPPLE & GINGER PROBIOTIC GUMMIES
Ingredients:
- 2 cups pineapple juice
- 2cm piece of ginger root, peeled & sliced
- ¼ teaspoon turmeric
- 2-3 tablespoons raw honey
- 1 cup ginger and lemon kombucha
- 6 tablespoons grass-fed gelatin
Directions:
- Add the pineapple, ginger and turmeric to a small saucepan and heat gently (no need to boil, just create a hot liquid). Add honey and stir well. Remove from heat to cool slightly.
- Bloom the gelatin by adding it to the kombucha in a small bowl and stir until thickens. Add the gelatin mixture to the warmed juiced and well until completely dissolved.
- Pour evenly into silicon moulds. Place in the fridge for at least 3 hours to set.
