Carrot Cake Bliss Balls


  • 3 large carrots
  • 8 medjool dates
  • 50g dried apricots
  • 1 cup oats
  • 1 cup walnuts
  • 2 cups shredded coconut plus a little more for rolling
  • 2 teaspoons mixed spice
  • 1/4 cup flaxseeds


  1. Blitz carrots, dates and dried apricots together in a high speed blender. Remove into a bowl.
  2. Blitz oats, walnuts coconut, flaxseeds and mixed spice together.
  3. Mix with the wet ingredients.
  4. Roll into balls and roll in coconut.


For a nut free version use 2 cups of oats and omit walnuts.
